1 Pound Shrimp, whole, clean and peeled
12 oz Spinach
1 pint Cherry Tomatoes
1/2 can cooked Yellow Corn
1/2 can cooked Black Beans
Dressing Ingredients:
1/4 cup Balsamic Vinegar or 1/4 cup Red Wine Vinegar
1 Garlic Clove. minced
2 tablespoons Granulated Sugar
1/2 teaspoon Salt
1/2 teaspoon Fresh Ground Pepper
1/2 cup Olive Oil

Grill Shrimp in a non-stick skillet or grill set at medium-high temperature for about 4-5 minutes until shrimp are cooked thoroughly. Prepare salad by rinsing the spinach and placing in a large bowl. Cut cherry tomatoes in half and add in rinsed corn and black beans. Toss everything together and add in shrimp. Make dressing for salad by mixing all ingredients together and drizzling over salad.
